Strawberry Pie
Before I get started with this recipe, I must first mention my new found love affair with picmonkey. If you haven't checked it out or used it yet, you are missing out, big time!
Back to the strawberries... I love summertime because summertime means lots of sunshine and lots of strawberries!! This Strawberry Pie recipe is extremely easy and delightfully delicious!
You will need:
1 pint of strawberries
3 tablespoons strawberry gelatin
1 cup sugar
3 heaping tablespoons cornstarch
1 cup water
1 pie crust
Wash your strawberries, cut off the stems, and slice them up nicely. Go ahead and pour them into your cooked pie shell.
Over medium high heat, mix water, cornstarch, sugar, and gelatin. When this starts to thicken up and stick to your spoon, remove it from the heat. Allow it to cool off.
Once it has cooled, pour over your strawberries.
Cover and chill for 30 to 45 minutes.
Not only is it tasty, but it's photogenic, too. That's another reason I love strawberries...they take great pictures.
P.S. Be sure to serve with some cool whip!!
