October Traditions

The Beloved Pumpkin Roll


In our home, October kicks off the beginning of the holiday season... and with the holiday season bring traditions and food!!  

Last year, we kicked off October with some scrumptious Caramel Apples...

This year, it's Libby's Pumpkin Roll.  That's right, it's not an original recipe but its posted on the back of the label for Libby's 100% Pure Pumpkin!  I know, why go to all the trouble to take pictures and write up a long post for a recipe that is available on a shelf in every supermarket?  

Because I wanted to...

Because it was fun....

And because it's an October tradition!!...

That's why!

This is actually a tradition of the hubbys.  He usually makes this one every year and I kinda took over this time. If you're reading this love, I am sorry...I didn't mean to steal your joy, or put nuts on the whole roll!...promise!  

Oh, and it didn't turn out nearly as tasty.  He just has that special touch I reckon... 

So follow along, or peel off the label, and together we shall bake up some yummy, autumn, pumpkin roll goodness!!  

Oh, and I forgot to mention...there is a song that MUST be sung with the making, baking, and eating of the pumpkin roll...(Yes! We made it up!)

"Pun'kin Roll, 
pun'kin roll, 
let me see that pun'kin roll..."

Repeat as many times as necessary!!  For us, thats somewhere between 20 and 200 times, approximately...

On t0 the baking...

Ingredients for the "cake"...

I am totally digging PicMonkey...if you haven't tried it yet, well...

WHY?

It's incredible.  

I played around with a lot of the different features in this post and it was really helpful in the collage below...

Impressed yet?

Preheat oven to 375 degrees.  
Grease 15 x 10 in jelly-roll pan;  line with wax paper. 
Grease and flour wax paper.  
Combine flour, baking powder, baking soda, cinnamon, cloves, and salt in a small bowl.
In a separate bowl, beat eggs and sugar until thick.  
Add in pumpkin and beat with mixer.  
Stir in flour mixture.  
Pour into pan and spread evenly.
Bake for 13 to 15 minutes or until top of cake springs back when touched.

While waiting on the cake to bake...
...
Wash dishes.
Sprinkle a thin, cotton kitchen towel with powdered sugar.
"Pun'kin Roll, 
pun'kin roll, 
let me see that pun'kin roll..."

"DING"
...
Take cake out.
Immediately loosen cake and turn onto prepared towel.
Carefully peel off the wax paper.
Roll up cake and towel together, starting with the narrow end.
Cool on wire rack.

While roll is cooling, make the filling, or, in my opinion, THE BEST PART!

Ingredients for the "filling"...

For filling, beat cream cheese, powdered sugar, butter, and vanilla extract in small bowl until smooth.  
Carefully unroll cake and remove towel.
( See how careful I was, mine cracked..Patience really is virtue)
 Spread cream cheese mixture over cake.  
Reroll cake.
Wrap in plastic wrap and refrigerate for at least one hour. 
The LONGEST hour of your life, I might add!
Sprinkle with powdered sugar before serving, if desired.

And now you have yourself a delicious Pumpkin Roll!
